Off Carte Shares A Simple Recipe For Creamed Corn

This year has been an unprecedented time of staying home more and eating out less. Which means we've had to re-familiarise ourselves with many kitchen utensils that we had almost forgotten we even had. Luckily, Off Carte is a recipe exchange community that's designed to make cooking at home both simple and fun. 

Founded by Joel Mevissen of Westmont Pickles and our very own Rosie Dalton, Off Carte shares easy DIY recipes from chefs, designers and everyone in between via Instagram.

And this week, they're sharing their simple recipe for delicious creamed corn, made at home (not from a can).

Here's how.


1. Remove the husks from a couple of corn cobs and brush with oil, then char on the BBQ or in a fry pan to introduce a little smokiness

2. Now remove the kernels from your cobs and reserve half in a bowl. Set aside

3. Add the other half to a fry pan with some butter, spices (we like paprika and nutmeg), and some S&P to season

4. Once butter has melted and spices have combined, add a generous dash of cream and cook for a few minutes

5. Now blitz your corn and cream with a hand blender or food processor until it reaches your desired level of creaminess

6. Finally, add the reserved kernels to your creamed corn and serve with some extra spices, plus S&P

7. Enjoy by itself or as a side at BBQ FaceTimes with mates
