Off Carte On The Perfect Pancakes

With Melbourne entering Stage 4 lockdown this week and Sydney on high alert, we have been staying home more and eating out less. Enter Off Carte, the recipe exchange community founded by Joel Mevissen of Westmont Pickles and our very own Rosie Dalton.

On Instagram, Off Carte shares easy DIY recipes from chefs, designers and everyone in between. Which is perfect for right now, when we want to cook at home, but still eat delicious food that doesn't require a chef's skills.

This week, Off Carte shares their tips for making the perfect pancakes. Breakfast for dinner anyone?

Here's how.


1. Make your dry mixture in a bowl, by combining 1 cup of sifted plain flour (or self rising if you like your pancakes extra fluffy), 2 tbsp sugar, 1/2 tsp baking soda and a pinch of salt

2. Now make your wet mixture by combining 2 eggs, 1 tbsp melted butter, 1 cup milk and a splash of good quality olive oil

3. Create a well in the centre of your dry mix and slowly pour your wet mix into that well, whisking as you go. This is the time to remove any lumps

4. Now heat some extra butter in a skillet on medium high. When bubbling, spoon a generous helping of the pancake batter into your pan

5. Resist the temptation to touch your pancakes until you see bubbling in the middle and browning at the edges. This is the time to flip them

6. Once browned on both sides, plate up with lashings of good quality maple syrup and fresh blueberries, or a squeeze of lemon with some sugar sprinkled on top

7. Enjoy!
