Off Carte Shares Tips For Roasting The Perfect Potatoes

If isolation has taught us anything, it’s that cooking should function as a form of self-care. Which has prompted us to experiment with comforting new foods, and to swap recipes with our friends as a kind of virtual dinner party.

Enter Off Carte – a recipe exchange community founded by Joel Mevissen of Westmont Pickles and our very own Rosie Dalton.

On Instagram, Off Carte shares recipes from chefs, designers and everyone in between. They have also been sharing recipes especially for Well Made Clothes. And this week, they are sharing their tips for roasting the perfect potatoes. 

Here’s how.





1. Choose your potatoes of choice – we love a Dutch Cream or a Royal Blue purple potato

2. Wash your spuds (with skin on) and cut up into small pieces for roasting

3. Boil potatoes in water for 15-20 mins until soft. This is where we like to infuse flavour, by adding garlic cloves, bay leaves, herbs or stock to the water, plus a little bicarb soda

4. Preheat the oven to 200 C and fix yourself a stiff drink

5. Once spuds feel soft, remove from water and toss lightly to rough up the edges a little

6. Add a generous glug of olive oil to baking tray (we like to heat this in the oven for five), then add your potatoes, some salt and any leftover herbs 

7. Bake for 40-60 mins, turning every 20

8. Serve hot with S&P, plus some fresh herbs
